Curry powder

Nice and spicy for quick curries

A home-made curry powder that will easily rival your favourite factory made tub. Medium heat and nicely aromatic. Make little and often for absolute freshness.

Mix together the whole spices in a dry frying pan and stir fry over a medium heat for about a minute. Once you start to smell their fantastic aroma, remove from the heat and allow to cool.

Using a coffee grinder or pestle & mortar, grind as the whole spices as fine as you can. Mix in the ground spices and store in a dark, cool place in an airtight container (old coffee jars are good, especially the posh ones with rubber seals).


 

Ingredients

Makes 4 meals
2½ tbsp coriander seeds
2½ tbsp cumin seeds
1 tsp fennel seeds
5 cm (2 inch) cinnamon stick
1 tsp cloves
3 bay leaves
½ tbsp paprika
2 tsp turmeric
1 tsp chilli powder
1 tbsp garam masala

Cook’s Notes

Add more garam masala and chilli powder to increase heat.
